Ever cook with coconut flour?

My 'experiments' haven't gone well so far. :-( My pancakes were grainy, and the coconut flour/flax meal bread I was so excited about didn't rise at all. I am thinking I might give up on coconut flour. Wondering if anyone else has tried it and what the results were.

I have used coconut flour. The texture is different. My greatest sucess with it was some honey nut muffins. The recipe was on the bag of flour and I did not save it. When my bag was empty I did not buy more. Keep trying. I think that recipes that had eggs in it turned out better. I didn't have as much sucess taking regular recipes and substituting coconut flour for wheat flour. I found some recipes that were okay on a lo carb site. But not good enough to make me buy more flour when I used it up.

I've never even heard of it, though I'm not a coconut fan.
