Poached Egg IN an Avocodo..

Does anyone have this recipe? I've misplaced it, and cleared my history, and can't find it anywhere.

Hmmm, I'm looking around and finding several recipes involving eggs and avocados. (This makes sense since they are similar in shape and fat content.) Was it like, an egg that was poached inside the avocado? Or was there more to it than that?

It was inside of the avocodo; I found it the other day, but I've lost it, and I'm going grocery shopping, and I want to do it, but I can't find out how to poach it in the avocodo.. Needless to say, I don't know how to poach eggs, period, LOL.

Oh. Hm. I'm not finding much on the topic myself! Soudns tasty though... I'll experiment and get back to you. in the meantime, without trying to sound condescending, would you like to know how to successfully poach an egg?

I've heard lots of raving reviews, but it just sounds sort of odd to me... I love avocados, but I'm not an egg person.

I found this..Sounds interesting. I might try it myself.

Cut a ripe, medium avacado in half lengthwise.

Remove Pit.

Scoop out 1 Tbsp from the center of each half.

Finely dice scooped-out pulp and save.

In a small pot, combine 1 Tbsp lemon juice & 1 cup water.

Bring to a rolling simmer.

Add 2 eggs & poach for 60 seconds or until desired doneness.

Microwave avacado shells for 45 seconds.

Place a poached egg in each shell.

Mix diced pulp and 1/4 cup salsa.

Serve salsa mixture on side or over eggs.

Number of Servings: 1

Just so everyone here knows, poaching, ACTUAL poaching, occurs at 145 degrees fahrenheit, and at this point, there are bubbles on the bottom of the pan, but not rising at all, let alone breaking the surface. It will look like nothing is happening at all.

As a lesson: POACHING =/= SIMMERING.
