I love making meatballs, and mine are (not to brag) the best I've tasted. But I prefer sausage or biiiiig chunks of veggies!

Both, all and more...I like meatballs made of beef, turkey, or chicken, sometimes even venison. I also like sausage crumbles, or diced chicken. Or sometimes I like ground beef. Or I will go with some meatless meatballs. Sometimes just a good veggie sauce, by adding mushrooms, onion, bell pepper, garlic and sometimes even zucchini.

I've found that I prefer sausage only in my marinara sauce, if I'm using meat. I've taken to cooking up huge batches of half hot pork Italian sausage and half hot turkey Italian sausage, then I freeze the crumbles to use whenever I need it. I also cook up large batches of marinara sauce and freeze that in two-cup portions. I learnt recently that what really makes the sauce, for me, at least, is a few dashes of Thai fish sauce.
