What's for Dinner?

A strawberry smoothie, juice from an assortment of veggies and a soy protein shake.

We just watched Fat, Sick and Nearly Dead and we're quite gung ho about juicing.

And I had some cheetos on the side.

Shrimp nacho fajitas! Loved them!

Pile some nacho chips onto a plate

Stir fry shrimp, tomatoes, mushrooms, onions, bell peppers

top nachos with shrimp mixture
top this with cheese dip

enjoy with salsa!

I'm thinking something simple like a fresh salad, marinated chicken wings with a few wedges on the side cause tomorrow will be a roast leg of lamb with the works.

i made some salad (baby spinach sprinkled with blue cheese and raisins) and 5 oz sirloin for me and russian pancakes with cream cheese and raspberries for my husband. he wanted breakfast for dinner lol

Dinner for us tonight was a T-bone marinated in garlic oil, salt and pepper, then seared in a griddle pan til medium rare served with home made wedges sprinkled with flaked salt and a greek salad with lots of feta

Chicken breasts roasted in PANKO breading from Japan. Served with mini carrots in a honey glaze, and with a walnut, cranberry salad (walnuts, cranberrys, english cucumbers, hearts of romaine in a ginger dressing).

Was pretty good, dipped in a honey/ginger sauce.

A HONEY of a dinner, really.

Desert, however, was pure chocolate. We take plain old Pillsbury Crescent Rolls, pinch two triangles together to make a rectangle, then pour chocolate chips onto the end, roll it a bit, pout in a few more chips, roll...repeat. My hubby likes it with chocolate chips AND sliced almonds together. Either way, bake for a few less minutes then on the tube (the chocolate retains heat and keeps it baking), remove from over and ENJOY....but CAREFUL, they are HOT, HOT, HOT inside.

Gonna make chicken breasts in a coconut and red curry sauce. I'll throw in a summer squash from my garden as well as red pepper and onion. I'll serve it over rice, and I might venture to make some homemade naan.

Last night, we both cooked. He made some really yummy bone in pork chops on the grill with BBQ sauce. I made some rice in our new rice cooker (it turned out perfect!) and added some chunky apple sauce. I also cooked some sauerkraut for him (blech, I can't eat it!) He also did some corn on the grill, but I think he didn't cook it long enough. It tasted like Feed Corn. But, we had so much food that we didn't really miss the corn.

A few night ago, I took some ground lamb, cooked it with garlic and herbs and wine, then added tomato sauce and cooked zucchini. Then I made some couscous, slapped some olive oil on some Pita Bread, and cooked them until they puffed, and served it with some goat cheese for those who wanted it. And some hummus on the side. Squeeze fresh lemon juice over the whole thing once you put it in the pita and eat. YUM!

Two days later I took the left overs of lamb, added cooked carrots, and more sauce and wine, then put it into a casserole dish and covered it with mashed potatoes. It's called some kind of "pie" but I can't remember which one.

Yesterday I wound up working an 8-4:30 coupled with a surprise night shift from 2am til 7:30... so I slept in late, and now I'm making a very simple meat loaf for the family's dinner before I go out to work my "day" shift before the sun goes down. I'm going to try to squeeze an apple pie in for my sister, too.

Tonight, I am making the pot roast we will have for lunch and dinner tomorrow. It's a 7 bone chuck roast and I will be using garlic, salt and pepper for the spices and onions, carrots and potatoes for additional flavoring.

It's one of my easiest and most loved recipes. I like to make it the night before because it's one of those things that's just so much better the next day.

That sounds delicious! Do you leave it cooking in the oven all night? Do you use a enameled cast iron or stainless steel dutch oven? I'm wondering which one's the top choice for tastier pot roasts?

I don't like oven roasts because there is never a chance for a rolling boil to happen; I just throw the thing in a stew pot and cook it for about four to six hours on the stovetop. I put the vegetables in about forty-five minutes before I take it off the stove so they don't get mushy. Sometimes I'll put a lot more potatoes than is necessary and mash them afterwards.

Last night I made J and I pan-fried chicken breasts, pounded out and coated with seasoned bread crumbs and a dash of cumin, fried a tbsp of olive oil and a tbsp of butter. Once the chicken was cooked, I took it off the pan to rest and added another tbsp of butter and the juice of one lime. Once that was melted, I drizzled it over the chicken and served them right away with rice pilaf and corn topped with chopped jalapenos. Washed it all down with a super easy margarita - for a whole pitcher mix 1 can frozen limeade, 2 cans water, 1 can good silver tequila, 1/2 can lemon juice, and 1/2 can triple sec.

Tonight, it's sloppy joes night! One pound ground beef browned with 1 chopped onion, 1 chopped bell pepper and 1 grated clove of garlic. Add 2 tbsp chilli powder, 3 tbsp BBQ sauce, 1/2 cup ketchup, 1 tsp Worcestershire sauce, 1 tsp brown sugar, 2 tbsp apple cider vinegar and S+P to taste. Served on toasted burger buns and topped with shredded cheese of choice (We're using a blend of cheddar and Monterey Jack). Served with baked french fries made from white potatoes and a simple tossed salad. Washed down with a beer

Sam, thanks a lot for these tips I don't have a lot of quick and easy recipes in my "collection" and making some pasta with sauce would be awesome! I've tried, but sauce has always been a tricky one to make.

Damn hon, you sound like you really getting into this cooking thing. The sloppy joes sound fantastic! I never considered making them from scratch. I have to hide peppers in things around here.

I had egg noodles with a chicken/pork stock soup, a small scoop of fried shallots with the oil, and thinly sliced yellow onion and green onion. I was still hungry so I ate cereal.
