What's for Dinner?

I love to cook and I always enjoy learning what other people have for dinner/supper. It doesn't matter if it's a fast food meal, take-out, or home cooked.

So, humor me (give me some new ideas) and tell me what you are having or had for dinner. I want alll the details. If you had a greens salad with a ton of healthy and delicious toppings, I want to know what greens you used and what the toppings were.

I'll start.

Last night for dinner we had pan-fried seasoned bone-in pork chops with scalloped potatoes and green beans. The chops were sprinkled with Nature's Season herb/spice mix. They were sooo yummy. Potatoes were kind of eh and well, you can't screw up green beans no matter how hard you try. Oh, wait I take that back...add almonds, blech!

Tonight I'm making honey Dijon chicken thighs. A glaze of equal parts honey and whole grain Dijon mustard brushed on bone in chicken thighs and baked at 400 F for 30 minutes (brushing the glaze again half-way through). Comes out like candied chicken. Yum! Serving it with roasted potatoes and onions tossed with olive oil, Italian season, and maple pepper; baked in the same oven but started 10 minutes before the chicken. Also making a salad of romaine, tomatoes and cucumbers with a oil and balsamic vinegar dressing. Ugh.. now my mouth is watering

last night I did chicken tacos and mexican rice, all from scratch. The night before I slow cooked some pork ribs. served them with baked potatoes and a fresh salad from the garden.

Last night was a simple pasta thing. I made noodles and sauce that I doctored up nicely. I just need to figure out/take the time to make my own tomato sauce and then it'll have all been from scratch for the most part. My sauce was a can of regular tomato sauce, with one onion all chopped up, some sliced cooked mushrooms, garlic powder, another flavored garlic seasoning I have, steak seasoning, a pinch or two of ginger, and some cinnamon. Cinnamon is one of those things that you wouldn't really think about putting into pasta sauce, but is actually pretty good provided you don't put in too much. Start small because you can always add more.

That does sound really good. I know you're supposed to put a very minimal amount of sugar in tomato sauces to cut the bitterness. I've never tried to make my own, but I've always wanted to. Life just moves so fast sometimes that it doesn't seem worth it to spend all day in the kitchen when it could be spent in the bedroom.

Tonight we're having a garlic chicken & pasta with fresh broccoli, frozen green peas and frozen corn. It's not my favorite meal to make, but it's rather simple.

The other night I made a sirloin tip roast in my recently purchased pressure cooker. I browned the roast and some garlic cloves in the pot, added fresh rosemary and two cups of beef stock, and pressure cooked it for about an hour. It was so tender, I was able to break it up with my tongs instead of cutting it. I made garlic mashed potatoes and a blend of white and yellow corn as sides.

It's funny that you mention the sugar thing because when I was younger I would add sugar because I liked the sweeter taste, but as I've gotten older I hardly add any sugar at all. I just don't find it to taste bitter really. And if I ever sit down to make my own, it'd probably be the way my mom does. Spend a day making the sauce, and then canning the sauce. So now it's in convenient easy size serving jars

Tonight is boneless pork chops sliced thin and sauteed with onion, pepper, mushrooms, and zucchini. Served on top of udon noodles with jarred (meh) Pad Thai sauce.

I suppose if you're using canned tomato sauce there is already sugar in there. I *need* to learn how to make this stuff because hubs is Italian and I think he'd buy me the Hope diamond if I learned how to make meatballs and marinara. I like spicy tomato sauces...I hate Chicago deep dish pizza. It's so sweet and just yuck! But, he adores it. It's a learning curve for sure!

Here's the recipe for the Garlic Chicken stuff.

Cooked Rotini Pasta (I like the tri-color)
1 lb of boneless, skinless chicken breasts cut into 1 inch pieces
3 cloves of garlic finely minced (jarred works, too)
1/2 cup of chicken broth
1 crown of fresh broccoli (soaked in salt water to remove bugs)
1/2 cup peas
1/2 cup corn
A teaspoon of lemon juice or one half lemon squeezed
Oil (I use vegetable)

Sautee garlic and chicken together until brown, add broth, lemon juice, pasta and veggies and sautee until veggies are soft. Serve with garlic bread. It's so freakin good!!! Sometimes I put butter in the sauce, but not very often and I always use a generous amount of salt and pepper.

It's decent for a jarred sauce, but Pad Thai sauce is an awesome combination of Tamarind pulp (sour), fish sauce (salty), palm sugar (slight sweet), and Thai chilli powder (spicy). It's fantastic if you get it from a Thai restaurant, and I should really consider just buying the separate ingredients and making my own sauce for next time.

Tonight I'm broiling lamb loin chops marinated with Mexican spices and lots of extra hot pepper powder, oven-grilled Brussels sprouts coated with freshly crushed black pepper, olive oil, and sea-salt.

I think I'm making tacos tonight. I bought a ton of arrachera last week so I still have some. It's quick and easy. I made a pot roast yesterday so I kind of want easy today.

I'm going to the local gas station that has made to order food. Fancy!

I'm thinking it's gonna be a spicy chicken sandwich with buffalo sauce and ranch topped with onions and some fries on the side.

I'm too cranky to make myself any food. Hmph.

We had one of those around here, it wasn't bad. They served Chinese dishes...and everyone was Hispanic...I always got a kick out of it.

Ours is called Sheetz. They're open 24/7. When I worked 3rd shift, that was the only place open. You can get all sorts of stuff there. They've got sandwiches, subs, pizza, nacos, and a ton of other stuff. The good part is that you can watch them make it. They're really popular for coffees and stuff, too.

Oh, a few nights ago I did some 'real' cooking. I made a Szechuan stir-fry with tofu, mixed stir-fry veggies, and dried chilies and served it with white rice. The night after that I made basil ranch pasta salad and threw in some onions, spinach, and cucumbers.

I miss sheetz!! I went to school near pittsburgh so there were tons of sheetz around. It was so great at like 3 am and you're hungry.
