I've been eagerly awaiting re-stock for the JimmyJane Form 2 and 3, which was listed as today (hooray!) Unfortunately, now that I check both pages, the update has been taken down and neither are back. Is there another date that I could know?

The date that shows up isn't exact, it's an estimate. When the product doesn't arrive on that day, it just changes to 'Out Of Stock', and you'll have to simply set an alert for when it's back in stock. You could also try submitting a support ticket and see if they can give you a better answer.
