I don't know if I could choose just one. I'll try to narrow it down to three though:

The Hungry Caterpillar.
Are You My Mother?
Anne of Green Gables.

I love all the books mentioned so far as well. Actually I love the movie version of Anne of Green Gables. I never read the books. I wanted to read them with my daughter, but she was never interested.

I'd like to add Harold and the Purple Crayon to my list.

The Just So Stories by Rudyard Kipling.

Very strange and wonderful stories. I used to get read them so many times as a kid that I've still got some memorized.

OMG I can't believe somebody else likes (or even remembers) Go Dog Go!

My all-time favorite kids book (and maybe just flat out all time favorite) is Alice's Adventures in Wonderland.

Wonderful book.
I had forgotten about Stand Back, said the Elephant... It's very good. I'll have to buy it for my nephew's Christmas present.

Second for Alice in Wonderland and also Through the Looking Glass.

The Phantom Tollbooth. Good for kids and adults alike, so if you missed it as a child, pick it up now. It's one of my favorite all time books.

The Hobbit is technically a kid's book, but I would argue I enjoyed it a lot more as an adult.

Harry Potter - pick any book in the series. They all rock.
