I love all the books mentioned so far as well. Actually I love the movie version of Anne of Green Gables. I never read the books. I wanted to read them with my daughter, but she was never interested.

The Just So Stories by Rudyard Kipling.
Very strange and wonderful stories. I used to get read them so many times as a kid that I've still got some memorized.

Second for Alice in Wonderland and also Through the Looking Glass.
The Phantom Tollbooth. Good for kids and adults alike, so if you missed it as a child, pick it up now. It's one of my favorite all time books.
The Hobbit is technically a kid's book, but I would argue I enjoyed it a lot more as an adult.
Harry Potter - pick any book in the series. They all rock.
