Dinner tonight?

What are you doing about dinner?
I'm not inclined to go to the store for anything given it's a 25 minute drive. I have chicken that I should cook and a desire to cook something new and healthy.

(Without red meat. Constraint in my household. Cookbooks don't do semi-vegetarians well.)

And easy. Seriously easy. I'm worn out.


(Did you know that chicken eggs can have twins? I think they are doing something these days! I just had fried eggs for breakfast and two eggs had a double yolk!) Yes, I know they are all unfertilized these days!

We just experienced the egg twins phenomenon ourselves this morning! We were making scrambled eggs, and one of them had a double yolk

As for dinner... Last night we tried an Indian restaurant for the first time ever. We both got meat dishes--chicken and lamb--but the menu had a lot of yummy-looking vegetarian options too. The chicken was in a creamy tomato sauce, I even found a recipe for it: Murgh Makhani. If you try that recipe, be sure to let us know how it turns out

Throw the chicken in a shallow roasting pan and pour some Italian dressing over it, bake in a 375F oven for about 30-40 minutes (or until juices run clear when pierced with fork). Simple, and it makes the chicken tender.

(I haven't had any twin eggs in ages - not since I was a kid living in Missouri in the 1980's.)

We're having spag at my house, although I would prefer just a salad and some soup. Florida is too hot to be cooking 'normally'.

I made red beans and rice, with chicken-friend pork cutlets for dinner last night. Having a rice cooker makes it easier - but I wasn't looking for super fast, just yummy!

I want a recipe for red beans and rice. I love it!!! I just don't know how to make it. Oh and I don't have a rice cooker.

I wanted to make the Parmesan chicken, but my husband volunteered to cook on the grill. That's about an annual event so I took him up on it.

Tonight a casserole, I think! Food for the week.

I can't get my husband to grill for nothing!! He always has an excuse. Maybe I will barter with him, grill for sex.

I use my rice cooker for all in-dorm cooking, since we don't really have student kitchens, just a "hall microwave". You make all sorts of stuff with a rice cooker. I usually opt for ramen, but a lot of rice and soup dishes are possible too. I've heard of others actually making stir fry in their rice cookers, but I'm too lazy for that one.

Costco has really delicious frozen ravioli and tortellini right now, so I've got my freezer packed with those. Very quick and easy to cook. I like to sautee mine with a little butter and sage or garlic.

That sounds really good. I had some leftover White Castle at work, but hopefully there will be something else when I get home, lol

Such a funny movie! I got to try them once when I visited Chicago - I found out why they're called Sliders And then I won a contest from them and the prize? About 1,000 hamburger tattoos lol.

We had leftovers tonight - hoping to get someone to cook tomorrow.

One of my favorite dinners is an upscale version of that. Baked tortillas topped with cooked chicken, green chilies and diced tomatoes. Add a bit of cheese and pop back in the oven long enough for the cheese to melt.

Tonight though - pureed beans on fresh bread with tomatoes. Served with a side of tequilla or wine! Italian bruschetta!

Tonight I had a regular round of dorm food. Spaghetti & meat sauce, nachos, cake from the cake table... There's a weird bland aftertaste to just about everything but the fruit and cereal. I'll probably follow it up tonight with a ramen break Wooo ramen!

I love it. It's one of my permanent stress points right now. Plan dinner and actually get it together before some melts down...

I got home really late last night and very hungry... the pork chops, sauerkraut, and potatoes were great!

I am a vegetarian..I eat very healthy.... meat eaters are not for me...

My sweetheart & I were actually vegetarian for a little over a year.
We're Pescetarian now though, meaning the only meat we eat is fish. =)

I don't know where she got them, but one time Victoria bought these spinach and cheese filled tortellinis... they were so good!!!

Tonight's dinner will be fried rice with tofu. Yummy yummy goodness.

I'm semi-vegetarian, as well, and my dad (with whom I live) is a carnivore. Makes for interesting dinners every night.
