I am not at all a vegetarian, but I really enjoy some vegetarian dishes. Tofu can me amazing depending on how it is prepared.

I am driving through somewhere and meeting my drummer and guitarist in the parking garage by the studio we rehearse at where we're going to eat our fast food on the tailgate of my truck and smoke cigarettes and pretend to be rock stars! They're getting Del Taco - I'm thinking a nice salad for myself.

Wow! That is a great idea! Asparagus is one of my favorite non-meat foods; especially the really big pieces that are steamed and still crunchy.

make sure you wrap it in good bacon, nothing too fatty. And ya gotta coat the asp in olive oil.

Grilled pork chops topped with grilled peaches, red onion, blue cheese crumbles, and pine nuts. Sounds complicated but it isn't . I picked up a copy of "Cook This, Not That" and the recipes are super simple and so far all have been good. It will be accompanied by corn on the cob, roasted aparagus and eggplant. We're having company! Otherwise it would probably be pizza night. Bon appetit!

Well I ended up making a chicken salad. Baby Italian lettuce, diced up chicken, sliced apples, dried cranberries, sliced almonds, and topped with a balsamic vinaigrette dressing. Chocolate frozen yogurt for dessert ^^

Last night was baked ziti in a heeeeavenly marinara (a recipe from like 4 generations back) sauce loaded with about 5 pounds of cheese and topped with breaded baked chicken and about 5 more pounds of cheese.

Note: I may or may not have exaggerated on the amount of cheese.

Tonight, I think that I'm having a mac and cheese and hot dog night. Hahah. Reminds me of when I was a kid and we used to go to Perkins on the road - I always got the cut open hot dogs with the mac 'n cheese on the side. And finished with a smiley face clown sundae.

That sounds delicious too!

Baked ziti is one of those comfort foods - in my extended family, baked ziti usually means Sunday dinner...or a funeral, a birth, or an illness.

I haven't made it since the fall, but I do love it with real homemade sauce and lots of cheese!

And we usually do chicken parm on the side of almost all of our baked pasta dishes.

Yum! I think I'm making pasta for dinner tonight!

Tonight: Nachos/Taco Salad stuffs. It wasn't until the chicken was cooking that I realized we didn't have any gr. peppers, tomatoes, or olives.

it was still good though.

Cyn made breakfast this morning...it was...chivey.

It was a DELICIOUS brunch and you KNOW IT O_O

I also made dinner last night: wonton noodle soup. Mostly made out of packets, but I thought it was pretty good stuff. JR hated it though--he's not a fan of fishy-tasting things, and we used "shrimp-egg" noodles. And then JR fixed us mini sundaes for dessert--YUM!

We did pizza tonight, but when I do chicken for dinner, a really easy way to cook it is to line a baking dish with tinfoil, place the chicken on the foil, and seasoning on top, and then just bake them until they're done. I usually do so at 350*. Then on the stove, I take a can of cream of chicken soup, a cup of chicken broth, and mix them up and heat it, adding curry powder (or not) to the sauce. When the chicken is done, I put it and the sauce on top of rice. Super easy, and fast!

Made homemade pizza the other night, but used the wrong pan. The dough didn't cook through all the way and was really "floppy". Lol! It tasted better the next day.

Eh ... barbecue beef sauce (don't ask, because I don't think the package its in knows either), mac and cheese, and salad. I can't WAIT to get a job so I can cook my own REAL food instead of having to put up with my family's insane pickiness that results in total blahness and/or convenience foods because they're cheap.

marinated chicken legs in italian dressing for a few hours while they thawed. Then I made an egg/milk/flour/curry wash with crushed tortilla chips and parm cheese. Bake @400 for about 40 mins.

As a side I melted 5 cloves of garlic in a stick of butter with oregano and parsley. When that was all melty for about 10 mins or so, I added parm cheese and milk to round it out and pour over egg noodles.

It was ok.
