I am confused what you mean about can't have ranch in relation to shake and bake. Is it ranch shake and bake?

I'm not sure about the recipe since you don't want to add most of what it has in it, seems like it might be better to just find a new recipe since so much of the recipe you can't eat It would be chicken broth, tomato paste and herbs. I'm not sure how that would come out without the salsa or chili paste and the red wine vinegar to balance it all out. Do you have just some mrs dash or anything? You could just bake the chicken with some of that rubbed on..or even just some salt and pepper and put it over rice. Maybe some lemon on top?

If I understand, it sounds like you need something to coat the chicken so that the Shake and Bake sticks, but also provides moisture. You can't use Ranch dressing, so how about just a little butter? Or perhaps something like plain yogurt or sour cream?

Olive oil does fine in the oven and would coat the chicken. I'm just not so sure how the tomato paste will taste on its own without something else to balance it. I think that olive oil with the seasonings would taste good though, nice and simple and would probably go nice with rice.

For the shake and bake you can also just moisten them with water and then shake them. You don't have to use ranch. I've seen that on the pack where it gives the recipe idea but you can also just use water on it.

It might work, I'm not familiar with Earth Balance. You wouldn't need much, just enough so that the Shake and Bake can stick better to the chicken and provide some moisture so that it's not just a dry coating. One thing you should check is that Earth Balance can be used for cooking. Some substitute products break down in heat and won't taste good.

And if you do use it and the coating looks dry after some cooking, you could try covering the chicken with foil. This will trap the moisture from the chicken as it cooks and help moisten the coating. You can take the foil off towards the end if you want tit to crisp up.

You can use olive oil, but it really won't replace the vinegar. The vinegar provides flavor and acidity to the dish. Can you tolerate wine? A little cooking wine would be a milder substitute for vinegar.

I think olive oil would go ok with the tomato sauce. Then add a little seasoning and it should come out ok. The olive oil won't replace vinegar..they're kind of opposites..but it'll taste good with some tomato sauce, like an italian dish.

The alcohol cooks out so you only have the flavor.

However, I would do as Alicia suggests, just skip the vinegar and add a little olive oil if you like. If your stomach is sensitive to acid, I would not substitute tomato sauce, it can be acidic as well. Tomato paste is sweeter and less acidic I think. Add some herbs for additional flavor if you like and can tolerate it. Basil typically goes well with tomato based sauces. Hope you feel better.
