I really enjoy my omelette scrambled, but sometimes I like how fluffy the insides are of a folded omelette. How do you like your omelette?

I'm not sure it's considered an omelet if it's scrambled, no chef would let that our of the kitchen under that name.

I've found I make omelets best on a flat top grill, so for the most part I make those at work. We don't eat eggs at home, he's allergic to them.

...now that you mention it, it sort of is.
You mix up the ingredients and in the process the yolks break and blend in with the rest of it just like they do when you scramble them.

If it's not made the correct way, which includes folding, then it's not an omelette. If you don't want to fold, try making a frittata instead, it's fluffier!

folded is the best. I know it's silly but I think the best way to fold it is both sides inwards (overlapping a little), so it comes out as a long rectangle). Even better when filled with veggies and cheese!
