I think there's a difference between telling people to be more polite/inclusive and just being really nit-picky. Sometimes things are just so inconsequential it's best to let it go. Of course, if someone is just blatantly behaving in a racist/sexist way, I don't see a problem in calling them out.

I've never seen anyone being "too PC" in real life, it's usually just on the internet.

I think about the 'Happy Holidays' thing that Eeyore had it right:

"Oh! Well, Many happy returns of the day, Eeyore."
"And many happy returns to you, Pooh Bear."
"But it isn't my birthday."
"No, it's mine."
"But you said 'Many happy returns' -- "
"Well, why not? You don't always want to be miserable
on my birthday, do you?"
"Oh, I see," said Pooh.

If I wish you Merry Christmas, I hope your December 25th is Merry. I don't care if you're not a Christian, I still hope that my religious holiday is a pleasant day full of nice things for you and yours.
