What are you making for dinner tonight?

The weird food thread got me thinking. When I was on HipForums we had a running "What are ya fixn' fer supper?" thread, and it was really useful. I am kind of nosy about what other people eat, too.I also like to get ideas.

Tonight, My Man is staining the rooves of the outbuildings so we are having an easy dinner. BLTs with home grown tomatoes. Kind of lame, I know, but with the home grown tomatoes, they are sublime. If I had it in me, I'd bake some bread to go along with it.

Tomorrow will be something called "Shipwreck" which is a layered casserole, with sliced potatoes, raw brown rice (everything is raw when you put it in the casserole) a little bit of onion, sliced up celery, sliced carrots, broken up ground sirloin (I hate the fat, so we eat sirloin) covered by enough boiling water for the rice and then tomato sauce to cover. It cooks in a 300 degree over for about 2 hours and the leftovers are fantastic! It's done when the ground sirloin is completely cooked and the brown rice is soft.

You can make this meatless, add whatever vegetables you want, the only thing you have to measure is the rice to water ratio. But the potatoes on the bottom and the rice right above it. Ever layer is then sprinkled with some salt, whatever herbs you like, a little pepper etc. Some biscuits or bread and butter or a salad and dinner is ready. You can also make this in a crock pot, just put it in first thing in the morning.

Hmmm I'm going to try that "shipwreck" does the beef go in raw too? I'll be using ground turkey because we don't eat much beef.

Tonight we're having spagetti and salads

Yep, the beef or other meat is put in raw and goes on top of the layers of vegetables, rice and potatoes. Then the tomato sauce on top of the beef. You can also put the onions on top of the beef.

Then you put BOILING water or bullion (enough for the measure of rice, depending on how many people you will be serving, I usually use a half a cup of brown rice to a cup of water to 0.75 lbs of ground beef. I used to make it larger, but one kid is moved out, one is a veggie and the little one eats nothing.) Make sure you seal the casserole well, because the rice needs to steam. Put it into a heated oven as soon as you put the boiling water in. (Use hot mitts, the glass will be hot if you use boiling water or broth!)

DON'T stir it, just cook it layered. It looks good in a glass casserole dish, but a regular one is fine.

I use ground sirloin, because if the beef has too much fat, it is icky. I make this for my veggie daughter, but use no meat, and I put a few TBS of olive oil on top for moisture.

Make sure the meat is cooked well, especially if you use poultry. I'd also add some olive oil or vegetable oil with the turkey, because you don't want the casserole to get too dry.

Have fun! It's a really changing recipue and you can put almost anything you like in it.

Tonight is going to be shrimp and scallops with spinach-mushroom risotto and a salad.

Tomorrow... not sure yet.

The wife thawed chicken thighs, so I was thinking of braising them in a sweet soy, onion, and ginger sauce. It comes out a nice reddish brown color and goes great over plain white rice. Not sure about a veggie yet. Ill have to see what we have.

BLT's sound so good right about now. We just ordered pizza though and I'm cooking up some chopped spinach for a veggie.

It seems like whenever I want to cook something, like the BLT's, we never have the ingredients!

Its been a cooking marathon all weekend for me trying to fill my son's hollow leg. Now that he's gone dinner will be something really simple like sliced cucumber with salad dressing.

We had hot dogs, hamburgers, potato salad, corn, baked beans and blueberry cobbler for dessert. That Shipwreck sounds really good, I might have to try it this week

I've got a leg of lamb on roasting for lunch. Then I'm doing roast potatoes, pumpkin, sweet potato and beans with gravy to go with it.

We just finished a wonderful supper of Red King Crab and USDA Prime Ribeye, roasted fingerling (purple, pink, and white) potatoes w/ julienne red pepper, onion, and minced garlic. For desert we had a chocolate mousse cake with whipped cream, served with butterscotch white mocha's. It was freaking fantabulous. My husband is amazing in the kitchen...among other places!

My boyfriend has been out of town for a week, and I can't really cook...so I've been doing pasta. Hah! I had Chipotle the other night, but last night it was penne ala vodka and white wine straight out of the bottle. I'm classy.

I made homemade chicken and dumplings last night. Potato cubes, cut carrots, peas, herbs, and chicken breast in a herb and wine gravy with truffle oil. When the stew is cooked, peas go in, then it's thickened with a roux. Then baking powder dumplings (mine are made with self rising flour, butter, oil, egg and water) on top, steamed until firm. We had it with Mandarin oranges. Then I made brownies to snack on. THEN a few hours later, My Man wanted scrambled eggs. So, I was cooking all evening.

It was fun.

I made venison stew last night for my hubby and the guys he works with but since he won't be home tonight I won't make much. No point just cooking for myself. Plus I'm in the middle of painting my kitchen and it makes it hard to get around!
