#EdenCooks - Buttermilk Pancakes and Brown Sugar Syrup - Mon 16 April, 8pm EST

Welcome to the April Meeting of Eden Cooks! Eden Cooks is a cooking club for any interested members of the Eden community. We will meet on the forum to discuss everything from tips and pointers for less well-equipped kitchens, explanations of cooking terms, and important techniques. There will be a featured recipe each meeting, with pictures taken as I prepare it for you. I will cover some ingredient substitutions to make each recipe more friendly to people with dietary restrictions.


We've had plenty of exotic meeting topics over the last few months: Jamaican soup, Vietnamese pho, and the slightly indulgent chocolate truffles of February---so I thought April would be a good month to get back to basics. We'll be making buttermilk pancakes and homemade brown sugar syrup together. This is an excellent meal when you've just had a sleepover (we are Eden, after all! ) , and it can also make a great "oh dang, I'm really hungry and I don't have any fancy ingredients on hand!" rescue meal. You can save pancakes to make easy peanut butter sandwiches on for tomorrow's lunch, too.

The real reason I decided to feature buttermilk pancakes in this meeting is that I just learned that you can get a box mix for pancakes at the grocery store. This is crazy! Why pay $4 for a box of stuff when you could make the same meal for about $1, and know exactly what goes in it? So, if you want to cut your food bill a little bit this month, and impress your overnight guests, come learn to make your own delicious pancakes!


During the meeting, two $25 gift cards to EF will be awarded to the winner of a trivia contest from information that I will provide during the meeting, and to the first person to guess a lesser-known kitchen implement from pictures I'll show.

The meeting will take place on the EdenFantasys forum in this very thread at 8 pm EST on Monday, April 16th. I'm really excited to get back to my cooking roots with you all this meeting, so I can't wait to see you there!

So pancakes are up there in my favorites. Cant wait, my pancakes always turn out different shapes and fluffinesses. (thats not a word). They taste good but hope to pick up tips on how to improve them though!

See, that sounds tasty.

I think actually one of the best breakfasts I remember every having... one was at a bed and breakfast in Germany (with homemade jams, and soft-boiled eggs in egg cups...), and the other was a fantastic vegetable eggs benedict in the Seattle airport. Weird, right?

I actually prefer topping it with a buerre blanc to a hollendaise. But both are tasty as all get-out.

I usually serve bacon, scrambled eggs, and biscuits with blackberry jelly. I find that I'm the only one who likes pancakes. So sad. They don't know what they're missing.

a big thing i had to learn with pancakes is really heating the pan beforehand and knowing when to flip them. if you figure those out you are golden!

We usually go to IHOP the next morning. I don't think I've ever cooked for anyone after a sleepover. Maybe I should start.

We are waffles or breakfast tacos kind of people. As only one person sleeps over with me quite regularly.

Welcome to the April meeting of Eden Cooks!

I'm really excited to be hosting this month---even though pancakes seem like a very simple meal (well, they are!) they can be a really great fun family activity, or an excellent way to wake up overnight guests. But most often, if I realize that I have let my refrigerator and cupboards get totally empty, and I'm starving and don't want to go to the store, I will throw together a batch of pancakes. I made this batch in 18 minutes!

On top of that, of course, they're absolutely delicious.

Trivia: Wheat, the second most important staple in the world (after rice), has been cultivated for at least 6,000 years.

It's all about the omelettes. French toast, if folks prefer sweetness.
