With so many countries sending athletes to the 2012 Summer Olympics, stirring up pride among their citizens and sons and daughters, I had a really hard time choosing which nation to celebrate with this month's Eden Cooks menu choice.

Should I have gone with pickling porcini and making rye bread to celebrate Fred , the founder of EF, and his nations of origin? Celebrate my ethnic heritage with some cabbage rolls? The US, nation of many EF members, by making barbecue?

I hope that the Pita Bread we're going to be baking this month works as a good compromise. Not only does it constitute a major component of the cuisine of Greece, where the Olympic games originated---but it's the easiest-to-make yeast bread I know of. And on top of that, it can be served with literally any meal you like, so no matter which nation you root for, pita bread will not be out of place on the table.

And to bring the uniting of nations in friendly athletic competition even more to the center of the meeting, we're going to do lots of club participation sharing the foods of countries you feel close to. Thanks for coming to the meeting!

Is anyone else stoked that stores are already starting to sell pumpkin beer?! I LOVE everything pumpkin. Pumpkin beer is actually what finally made me start to enjoy drinking beer 2 years ago.

We have quite a few friends who home brew. Thankfully, they love me enough to brew pumpkin beer just for me, so I'm never quite without pumpkin beer, even when it is not in season. Best friends EVER.

If you want to start to learn about yeast baking, pita bread is definitely the place to start. It only takes 90 minutes to rise, so you can come home from work, make the dough, and still have your pita popping out of the oven in time for dinner. You don't need to plan a day ahead like with slower-to-rise breads. The dough is elastic and forgiving, and everything still turns out fine if you don't roll it into perfect circles, so this is a great bread to bake with beginners and children. I've made this recipe with lots of friends who have asked to learn how to bake, and every one of them has gotten pockets on the first try.

It's a lot of fun to open up the oven and see your bread puffing up, just the same as it would have done in ovens before Alexander the Great.

Trivia: Olympic athletes in high cardio events such as swimming consume an average of 5000 Calories each day during competition season.

I'm of Irish descent, but my parents were both military. We lived in Germany until I was 4 1/2, so when I think of "my" ethnic food, I think of German food!

I love german potato salad with tons of vinegar and delicious, delicious rindsrouladen. I get homemade rindsrouladen for my birthday dinner every year. I love it so much!
