Pita is starting to make a lot of sense. That it has so little liquid in it really shows in the dough, and from the look of the dough, you can easily see where the texture of the baked pita comes from.

After the dough has doubled, punch it down to release the extra trapped gases. (There will still be plenty left, and more will develop.)




Now roll the dough into eight equal sized balls, and cover them up and let them rest for 20 minutes. Giving them this resting period makes them easier to roll. Set your oven to 450F, and if you have a baking stone let it heat up at the same time. If you don't have a baking stone, put a cookie tray or something in your oven to stay hot and work as a baking surface for you.





To fulfill the Olympians' protein requirements, the Olympic Village stocked 100 tons of beef, 31 tons of poultry, and 82 tons of seafood.

After their 20 minutes' rest, when the oven is hot, uncover your balls.

Take a rolling pin, dust the counter with a bit of flour, and roll each one out into a flat circle, about 1/4" thick. I usually actually roll mine too thin---they will puff better if they're thick, so you don't need to overdo it.
